Da Maria stands as a true Bali institution. Since its inception in 2016, it has combined Italo dining, contemporary design, and late-night energy under one roof, earning its place as a long-standing fixture in the island’s culinary and nightlife landscape. At its core, a continued focus on quality food and drink has defined Da Maria’s longevity. Led by Executive Chef Lorenzo De Petris, Beverage Director Denny Bakiev, and Bar Manager Luca Marcolin, the team shapes a dining and bar experience rooted in Italian tradition, while drawing influence from the wider Mediterranean and tropical surroundings.

The menu is bold and flavour-driven. Straightforward, modern dishes anchor the offering, beginning with cold cuts and antipasti, while pastas and secondi expand on simplicity and depth. Select imported ingredients remain essential; however, local produce plays an increasingly important role. Ingredients sourced from the hills of Kintamani, island-cured charcuterie, and local flour used for Da Maria’s Neapolitan-style pizzas reflect a deep connection to Bali’s natural landscape. At the bar, premium produce and thoughtful preparation define the cocktail program. The spritz remains a signature, while martinis take centre stage, served tableside.

The venue’s interiors, designed by Roman architects Lazzarini Pickering, remain a defining feature. Inspired by 1960s Amalfi Coast courtyard dining and reimagined through a contemporary Mediterranean palette, the space combines geometric tiling, indoor fountains, and brutalist elements, balancing heritage with the tropics. Though reinvigoration is on the horizon, with Carl Pickering welcomed back to the Island.

With his visit comes gentle alterations to Da Maria that, like the new food and beverage focus, will nod to its traditional roots, while paying tribute to its vibrant island home. “Da Maria feels like a timeless Mediterranean garden, Italian at its core, but abstractly Balinese. We’re keeping its DNA while projecting it into a new vision.” says Pickering. Adding to this continued evolution, Da Maria reopens for weekend lunches, extending the restaurant’s experience from day through to night.
